Ingredients:
500g of Sultanas or Raisins
4oz Butter
1 cup of sugar
1 cup of Boiling water
1/2 tsp Bicarbonate of Soda
2 heaped tsp of Mixed Spice
2 Eggs
2 Cups of Self Raising Flour
Method:
1. Cover the raisins/sultanas with the cup of boiling water, mix in the sugar and bicarbonate of soda and leave it to cool.
2. Mix in the butter
3. Mix in the eggs
4. Mix in the mixed spice
5. Mix in the flour
Put in an overproof dish and into a preheated oven.
150 degrees for around an hour – But keep checking until it is cooked
